Inspired by the primal essence of Tacubo’s wood-fired cuisine—a celebration of simplicity and unadulterated flavours—this design evokes the raw, immersive atmosphere of ancient communal gatherings. Imagine a modern reinterpretation of prehistoric caves, where fire crackled and meals were shared under flickering shadows. Here, the restaurant becomes a stage for elemental cooking, reconnecting diners to the visceral energy of humanity’s earliest culinary rituals.
Spatial Narrative: From Constraint to Revelation
A deliberate, elongated descent guides guests through a narrow underground passage, heightening anticipation before revealing an expansive, open dining space. This choreographed journey—compression followed by release—echoes the primal experience of entering a cave, fostering a sense of discovery and immersion. The subterranean location amplifies this narrative, grounding the space in an earthy, almost archaeological authenticity.
Materiality: Earth as a Sustainable Canvas
Every surface—floors, walls, ceilings, counters, and tables—is crafted from ‘tsuchi’ (earth), a humble yet universal material reimagined through sustainable design. Traditional Japanese plastering techniques define the space: the counter and floors feature ‘togidashi’, a polished, flat finish that exudes modern refinement, while the walls’ sculpted intentional roughness and grooved texture echo the raw tactility of caverns. This duality balances rustic warmth with sleek minimalism, positioning the restaurant within a luxury context while honoring its primordial roots.
Dramatic Contrasts: Fire, Wine, and Sensory Theatre
At the heart of the design, a wood-fired kitchen faces a curvilinear wine cellar housing 1,300 bottles. The cellar’s cave-like form juxtaposes the kitchen’s fiery theatrics, creating a dynamic dialogue between primal cooking and cultivated indulgence. Diners are immersed in a multisensory panorama: chefs tending open flames, the glow of the embers, and the organic geometry of the wine vault. Each seat becomes a vantage point for this living performance.

Beyond architecture, Tacubo’s world is shaped by bespoke collaborations. Handblown glass vases, subtly textured tableware bearing artisans’ fingerprints, and a soundscape woven from crackling fires and field recordings merge to create a layered sensory experience.
