Sala Cero is the latest restaurant by Sala de Despiece, located in the Salamanca district of Madrid. The space spans 350 m² across a ground floor and a basement.

Sala de Despiece is a gastronomic concept that draws inspiration from the elements and spaces of traditional butcher rooms, then decontextualizes and reinterprets them as functional elements in its restaurants. At Sala Cero, this exploration is taken to the next level.

From the street, a solid stainless steel refrigerator door greets diners. Upon crossing the threshold, the antechamber offers an aseptic space to enjoy a cocktail as a prelude to dinner.

Next, diners pass through a narrow corridor, designed to accommodate one person at a time, and enter the main dining area. In direct reference to the cutting rooms of traditional butcheries, the dining room is structured around a long U-shaped communal polyamide table. This design serves as both a boundary and a bridge between diners and chefs, drawing inspiration from the subdued ambiance of Japanese izakayas. Space, lighting, and materiality come together to create an intimate and shared dining experience.

Finally, the experience concludes in Subcero, the basement level, which features a cocktail bar and a club.

The project, designed by yyplusplus, represents a 360-degree design process encompassing all scales, from spatial design to furniture, including lighting, chairs and a variety of devices and mechanisms, merging architecture with industrial design.
