NM is the latest restaurant to open by Michelin Star chef Nacho Manzano, with 2 stars, located in Oviedo, one of Spain’s gastronomic capitals. NM is off the beaten track, with a capacity to accommodate a maximum of 20 customers. The main concept behind the design of NM is to create a neutral and organic environment to showcase chef Nacho Manzano's gastronomic experience, with as few distractions as possible: from the moment customers pass the threshold of its original door, they will be seated on its comfortable chairs, listening to the hypnotic hustle and bustle from the kitchen till their food is served at tables resembling a blank canvas.
The space is organised within a square floor plan, with two banquette seats at the two opposite ends to the kitchen, like two expectant observers. NM is also a multi-functional space despite its small dimensions. The entire interior design project features what are essentially neutral tones, with extra volumes and textures for added personality. This 'non-colour' is applied to practically all the surfaces, like, for example the marbled carpet. The furniture is also all designed by Hazard Studio: white Corian tables and bar counter, padded upholstered chairs and stools in a white swirly texture, a central element of furniture that functions as a service station and wall-mounted banquettes that playfully recall the back seats of a Mustang automobile.
The walls and the ceiling are covered with petal and scale like volumes that recreate decorative lifelike organic forms, resembling the protective skins of different food stuffs. These elements also perform practical functions: the upholstered ones act as sound absorption panels and the mirrored ones help to enliven the space, like a continuous visual feed to follow what’s going on in the other parts of the space. NW is a theatre of the senses, a restaurant aiming to provide a space of creativity. The suspended brass light fittings by Italian designer Paolo Navone for Gervasoni, draw the eye upwards, appearing to float in the air.
Walls and ceilings are used to recreate a sense of calm and stimulation of the senses, some of these delicate "petals" are backlit by RGB LEDs that can produce more than 16 million shades of light providing more intimacy and poetry to the space. Distinctive elements that add a visual strength that impact upon the diner. The playful lighting scheme is warm and atmospheric, the use of colours matches what chef Nacho Manzano provides through the gastronomic offering, with different tones depending on what’s being served on the menu.
The ultimate goal for this project is the creation of an immersive ambience offering several different background effects that add the project aesthetics to the sum of its impacting sensory experience together with taste and smell. This culinary immersion includes a soft reddish tint when game or meat is on the menu, or soft blue tones when fish is the highlight of the food offering.
