Ned’s Bake is a specialist bakery and café. Ned bakes all day so your bread is fresh & warm on the way home. You can buy it by the loaf, half loaf, quarter loaf, or simply by the slice. Ned’s was created out of a passion for bread, a very competitive category indeed; hence the space was critical for the brand’s launch. Ned’s needed to age beautifully - “a classic” with a modern twist like an old European bakery somewhere in Italy, full of romance and drama that handles the build-up of flour in the corners and steamy morning windows from huge ovens baking since 3am. It needed to serve breakfast in the early morning, through lunch to a sophisticated casual dinner service. There is no back of house at Ned’s. Nothing is hidden, not the master baker, nor his job sheet, written on the wall; not the ovens or the cooling racks and tables, nor the open kitchen that serves the café or the central preparation and finishing room. Everything is on display to showcase the theatre of true artisan bread and pastry. The café seating wraps itself around this core and into nooks and crannies, and bakers and floor staff walk from side to side through it to undertake their flourishing activity. Nothing is added either, unless absolutely necessary. The walls and ceiling were left as we found them, with everything exposed unless health code or common sense called for it to be otherwise. Ned’s is simple and snug and all about the joy of making friends and bread!
