When the client approached us, he had a fascination about the American food industry in the 70's and 80's. Especially during transportation ages, expressway food and gas stop areas with big franchises. at the most express stops hot food sliding out directly from the open kitchen to wide stainless steel trays for customers to pick up. It kind of resembles art deco/industrial cafeteria settings used by many big fast food giants.
In general, clients wanted to provide fresh, express food service but with a high culinary experience. During the pandemic the concept was developed to reflect 70's food culture as well as post pandemic society where eating well and keeping ideal distance from food prepared areas from customers.
To pack freshly made food in every bowl and to quickly deliver the food from chef to customer, we have created a 6 meter long and 3 meter wide slanted table. The table is a one piece solid wood top with 16 dividing slots for each menu. using a unique sliding table chef can slide a bowl directly towards each customer. giving the customer the thrill of catching their next meal in action. This table has evolved to keep the distance but through sliding motion it's not only thrilling to catch the food but encourages the connectedness to the chef.
As customers approach the enormous sliding table encased in a huge green box, a variety of delicacies are gently slid down on our signature food slide and generate a random color palette of colorful food as none of the food is stacked on top of each other but rather following the trails side by side. When food bowls are sliding at different slots at different speeds it almost looks like an amusement park's mechanical horse race, lined up food bowls create ever changing sculptural shapes as it's stacking at different lengths on each slot.
The table pitch had to be tested many times to ensure a quick and gentle landing right at the customer's hands. Chefs have a front row seat of the market, and they prepare food live according to the demands of certain menu items and total customers coming in, creating a constant synergy between customer and chef.
There are three ways to get you food.
1. grab and go (time stamp on each bowl to ensure freshness).
2, made to order.
3. preorder from the app and use a separate pick area.
When hunting and gathering foods in this new environment of social distancing, our sliding table ensures that chefs and customers are kept a safe distance away from each other, maintaining both a safe environment and an innovative way for delivering food in a fun and efficient way.
