B3, located in Coco Park in Shenzhen, is a bistro designed by RooMoo design studio. The concept comes from the brand. The bistro name B3 went from the first letter of: brunch, bistro, and bar. The studio takes ‘’time’’ as the concept, echoing the brand requirements and strengthening the meaning of time for B3. Materializing time implies repetition and movement. Therefore, the studio introduced" three waves" related to the B3 name.

The first wave is located outdoors. It is a metal partition composed of several stainless steel plates playing with mirror effect and colour. The outdoor wind on the metal pieces provides the illusion that the wave is in movement.

The second wave is more prominent than the first wave, overlapping the entire ceiling above the bar area.

The third wave is located above the dining area. The time stops below this wave, as this wave gets a flat surface without bricks or metal pieces, contrasting with the surrounding. The volume of this wave offers a niche space below it where customers can relax.

Designers wanted the design to match the freshness of the food in terms of materials, textures, and colours for the space to match the image of B3 cuisine. Using stainless-steel mirrors in contrast with rough surfaces such as bricks or the white wave element in comparison with the warm gradient colour of the bricks all offers nice textures and patterns.

The bar is located in the middle of the façade. They wanted the bar to be the focal point for customers to feel welcomed. By its position, the bar separates the dining area on the right side from the kitchen on the left side. It also forms a functional centre point to help the kitchen and bar deliver food and drinks.

Providing shade was a priority as the local temperature can be hot. So to use less electricity for climatisation, the studio focuses on searching for solutions to bring natural shade. For that, The studio created a layer of stainless steel plate right below the curve glass, above the bar. The distance between each stainless steel plate allows the sunlight to get in and the reflection on the stainless steel to not lose luminosity while the shade is created. The moveable outdoor partition was also designed to provide shade outdoors. The moveable panels allow passing urban authorities, as fixation cannot alter the ground. All partition are moveable offering the option to get a flexible layout in the future.

Every material used in this project can be recycled. The bricks used on walls were recycled from the surrounding local site. The bricks create patterns on the wall with horizontal lines in contrast with the curves of the waves. All built-in furniture has been designed as a component and can be easily removed and re-used.
