The Auberge de l’Ill is quite an institution, not only within French gastronomy, but also as part of Alsatian heritage and local life. It is a wonderful family story that stretches over a century and a half, and in 2017 can pride itself on being awarded three Michelin stars for the 50th time! Ten years after the completion of an initial overhaul of the restaurant, Jouin Manku was again called upon to revisit the interior architecture of the Auberge de l’Ill. The driving idea – in the spirit that has always overflowed in the Haeberlin/Baumann family – was to further enrich customer experience, to make their visit even more special. Working to anchor the restaurant quietly within its environment – characterised by river, fauna and flora – the decorative repertoire put together around these elements captures not only the surrounding landscape, but also the spirit of the place and the universe of welcome, beauty and simplicity constantly upheld by the Haeberlin/Baumann family.
