Ampersand is a multi-layered gastronomical landscape located centrally in Switzerland’s Lucerne within the bowels of a building from 19th century’s Heimatschutzstil epoch, an era known for its return to bold architectural elements of the classical periods prior. The strong cues we received from the existing building allowed us to formulate a concept based on particular thought processes and how they translated into the architecture of that time. A fleeting, yet seemingly frantic reach for the past, the Heimatschutz era extended certain elements such as bold arches, robust columns and distinctive framing of architectural culminations a lifeline. The unusual floor plate and generous ceiling heights allowed us to divide the space quite naturally into the various sections, restaurant, bistro and lounge, using not only vertical planes to reflect zones but also heights and material changes. As the various spaces beg a different behavior, as do the materials and forms assisting the guests to understand what this environment can offer them. Some materials, such as brass, are sewn throughout as a common thread tying all three varying territories together. Investing in the details is undeniably one of the strengths of this project; each visit exposes a new curve, fold or transition. The dialogue between what is found on the plate or in a glass and the design is contrasted, complemented and carefully lit to ensure the experiential quality of each layer of the venue is achieved.
