Rasmus Munk came to us to bring a few sketches and a big dream to reality. Rasmus was looking to create a world-class destination for his Holistic Dining concept. The space from which we had to create Alchemist was a 14m high former industrial warehouse serving previously as a boat building workshop and later as the set design workshop for the Danish National Theatre. Right from the start, Rasmus was keen on the idea of taking diners on a journey not only in a culinary sense but also in a physical way. The centrepiece of the restaurant would be an immersive dome. The key challenge of a space of this size is capturing the magnificent scale of the building while at the same time creating an intimate, un-intimidating ambience. While being very high end, we have managed to avoid the space feeling overbearing and pompous. Our approach to this huge space was to create a series of different zones over different levels through which diners progress, each with a different atmosphere. Most of the dining takes place in the 18m diameter dome. Alchemist has been very hard to ignore. Winning two Michelin Stars and being declared one of the Top 10 Coolest Places to Eat by Forbes and also being awarded 2 Michelin Stars, all within the first year of opening.
